Performance Reviews That Give Restaurant Teams a Next Step

A review should make the standard clearer and the person’s path forward more visible.

Performance reviews become unhelpful when they arrive as a surprise or a verdict. In a strong restaurant, feedback is part of the operating rhythm: a manager notices work, names what is effective, addresses concerns early, and uses a formal review to make the next period of growth and accountability clear. The document should summarize an ongoing conversation, not substitute for one.

Prepare with evidence. Look at attendance and reliability where relevant, guest feedback, observed service habits, product knowledge, role-specific standards, teamwork, safety, and prior goals. Avoid relying on a manager’s most recent emotional memory. Specific examples make feedback more fair and more actionable; they also allow a colleague to understand the distinction between a preference and an established expectation.

Structure the conversation around contribution, standards, and next steps. Ask the person what they believe is going well and where they need support. Name strengths that should be repeated, then describe gaps in observable terms. “Your communication is weak” becomes “on three recent shifts, the manager learned about a delayed course from the guest rather than through your handoff.” The second statement can lead to practice and a measurable goal.

Close with a small number of commitments: what the colleague will practice, what the manager will provide, how progress will be observed, and when the pair will revisit it. If a concern is serious, state the required change and the consequence with the same calm clarity. Accountability without ambiguity is more respectful than vague encouragement followed by unexpected action.
